- 4 large ripe tomatoes - coarsely dice to make 1 cup
- 1 large onion - finely dice [opt]
- 1 dsp chopped green local celery
- 2 fresh green chilies - finely chopped [opt]
- 2 dsps sugar
- 1 dsp vinegar or lime juice
- Salt to taste
- Mix all ingredients, adding or reducing vinegar and sugar to suit your taste.
